BLUE CHEESE SOUFFLÉ
This is one of our signature “dishes”, an amuse bouche served prior to the first course and accompanied by our housemade crostinis. Some of our guests have prepared this casserole-style instead of using individual ramekins, which, we are told works fine.
1 Cup Grated Blue Cheese
1 Cup Grated Cheddar
1 Cup Diced Onion
1 Egg
1/4 Cup Milk
1 Cup Mayonnaise
Salt & Pepper
Method: Mix all ingredients together and spoon into ramekins. Place in a water bath and bake at 300 F for 30-40 minutes until brown Serve hot.
